We’ve been taught to think of fats and oils as a necessary evil— the unhealthy part of anything we eat and the stuff needed to keep food from sticking to the pot. Nothing could be further from the truth. Fat is essential for health.⠀ ⠀ Dietary fat is very complex. Some fats are good and yes, some are bad. Eating the right fats burns body fat, boosts your metabolism, improves your HDL, lowers your triglycerides, and is associated with a significantly lower risk of heart disease, diabetes, and obesity. We need fats for healthy cell membranes. We need them to make hormones (like testosterone and estrogen) and immune cells, and to regulate inflammation. We need fats because 60% of our brains are fat.⠀ ⠀ This is why you should not live in fear of fats and oils. Rather, keep in mind that naturally occurring fats in our whole foods aren’t the problem; it's the refined, processed fats and oils that are added to our food by the food industry that are. You see, instead of eating delicious, healthy fats, we've been told to eat inflammatory trans fats and vegetable oils. Vegetable oils like canola oil, sunflower oil, soybean oil, and safflower oil which are high in omega-6 fats, which can increase inflammation. ⠀ ⠀ To get and stay healthy, eat quality fat at every meal. You should get most of your fats from meat, fish, poultry, eggs, dairy, avocados, nuts, extra virgin olive oil, virgin coconut oil, and grass-fed butter. And at the end of the day, remember that the kind of fat you eat is more important than how much.
